MEALS:
MONDAY: taco bowls
I love this meal because you can customize it to your liking! We just did cheese, sour cream, salsa and tomatoes.
TUESDAY: sloppy joe's on chaffle buns & roasted veggies

ROASTED VEGGIES INGREDIENTS:
cubed root veggies (pictured: zucchini, carrots, potatoes)
avocado oil
salt & pepper
italian seasoning
Bake at 400 for 25-30 min. or until done and crispy
WEDNESDAY: baked chicken & insane green beans

CHICKEN SEASONING:
salt & pepper
paprika
turmeric
THURSDAY: homemade pizza

PALEO PIZZA CRUST INGREDIENTS:
1/2c almond flour
1/2c tapioca flour
1/4c coconut flour
3/4 tsp salt
1 egg
1/4c avocado oil
1/3c coconut milk
1tsp honey
DIRECTIONS:
1) PREHEAT OVEN TO 450
2) COMBINE ALL DRY INGREDIENTS
3) CREATE A WELL IN THE FLOUR AND ADD EGG, OIL, COCONUT MILK & HONEY
4) ADD DOUGH TO PIZZA STONES (HACK: create little pizzas for more even crust baking & customized pizzas - see video)
5) BAKE DOUGH FOR 5-6 MINUTES (UNTIL TOP STARTS TO HARDEN)
6) ADD SAUCE AND PIZZA TOPPINGS
7) CONTINUE BAKING AN ADDITIONAL 6-8 MIN. OR UNTIL DONE
CHICKEN PIZZA TOPPINGS:
pizza sauce
mozzarella cheese
chicken breast (cooked leftovers)
goat cheese
frisee lettuce & balsamic glaze as topping (after cooked)
FRIDAY: sweet potato breakfast skillet

INGREDIENTS:
- 2 medium sweet potatoes
- 1 tbs avocado oil
- 1 lb breakfast sausage (Italian)
- salt & pepper
- 3-5 large eggs
- 1 avocado
- cilantro (optional)
DIRECTIONS:
1) PREHEAT OVEN TO 425
2) PEEL AND CUBE POTATOES
3) TOSS IN AVOCADO OIL, SALT & PEPPER PUT ON COOKIE SHEET
4) BAKE 25 MIN OR UNTIL BROWN
5) BROWN SAUSAGE IN SKILLET
6) COMBINE SAUSAGE AND SWEET POTATOES (AFTER BOTH COOKED)
7) CRACK EGGS ONTO BAKING SHEET (HACK: use baking mat linked above) AND COOK 5 MIN OR UNTIL DONE
8) COMBINE EVERYTHING AND SERVE WITH DICED AVOCADO AND CILANTRO
